Healthy Back to School Snacks

Back-to-school time means more activities and less time! Here are a few healthy snack ideas you can make ahead and pull out when the kiddos get home from a long day or you can toss in their lunch box.
Frozen Yogurt Granola Cups
Ingredients:
1 cup granola
1 Tablespoon melted Garden of Life Coconut Oil
1 Tablespoon honey
24 oz. yogurt of choice
Fresh fruit of choice
Preparation:
In a bowl, combine granola, coconut oil and honey. Mix well. Fill a muffin tin with cup liners and divide granola mixture across all, evenly covering the bottoms. Fill each cup with yogurt and top with fruit. Freeze for two or more hours.
Pumpkin Spice Cupcakes with Chocolate Frosting
Ingredients: (use organic)
2 cups all-purpose gluten free flour
1 1/2 cups coconut palm sugar
2 scoops Garden of Life Super Seed
1 Tablespoon pumpkin pie spice
1 teaspoon baking soda
1 teaspoon baking powder
3/4 teaspoon sea salt
4 eggs
3/4 cup Garden of Life Coconut Oil
1/2 cup carrot juice
1 teaspoon vanilla extract
Frosting:
3/4 cup cashew butter
1/2 cup cacao
1/2 cup Garden of Life Coconut Oil
1/2 cup maple butter or raw honey 1 teaspoon
vanilla extract
dash of sea salt
Preparation:
Preheat oven to 350 degrees. In one bowl, combine flour, salt, pumpkin pie spice, baking powder, baking soda and Super Seed. In another bowl, thoroughly combine the remaining ingredients. Slowly pour the dry ingredients into the wet ingredients using a hand-held mixer. Place cupcake liners into 18 cupcake pan spots and pour batter equally into each. Bake 20-25 minutes. To make frosting, place all ingredients into a food processor or high-speed blender and blend until smooth. Refrigerate frosting for about
20 minutes to help it solidify, and then spread on cooled cupcakes. Because there is coconut oil in the frosting, if left out at room temperature too long, it will begin to melt.
I suggest storing the frosted cupcakes in the refrigerator for up to one week. Remove them from refrigerator 15 minutes prior to serving so the frosting is perfect consistency.
Popcorn Chocolate Brownies
Ingredients: (use organic)
11/2 cups almond flour
11/2 cups organic cane sugar
(or coconut palm sugar)
1/2 cup Garden of Life Coconut Oil, melted
3 eggs
3/4 cup cacao
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon sea salt
2 cups Live Love Pop Popcorn –
Sea Salt Flavor
Preparation:
Preheat oven to 350 degrees. In a large bowl, mix together eggs, sugar, cacao, coconut oil, salt and vanilla extract. Next, mix together flour and baking powder then gradually
add into wet mixture until well combined. Next, gently fold popcorn into the batter. Pour batter into a 9×9 inch brownie pan that has been greased with coconut oil. Bake for 33-35 minutes and let cool before cutting and serving. Brownies last one week in refrigerator or one month in freezer.
Probiotic Power Pops
Ingredients: (use organic)
2 cups fresh strawberries
Juice of 1 lime
1/2 cup coconut water
1 Tablespoon honey
2 teaspoons Garden of Life Raw Probiotics Kids
Preparation:
Blend all ingredients together then pour in freeze pop mold and let set in freezer for at least three hours before serving.
